Honey and Lavender Mousse

Honey and Lavender Mousse (serves 4)

Ingredients

 Method

  1. To make the lavender infused honey, combine lavender, honey and 2 tbsp of water in a saucepan and warm through on a low heat for 5 minutes. Set aside after straining.
  2. Soak the leaf gelatine in cold water.
  3. Separately whip the cream, then the egg whites to form soft peaks.
  4. Dissolve the pre-soaked gelatine in the honey infusion, warm if necessary to help the gelatine dissolve.
  5. Mix the honey through the whipped cream then carefully fold the egg whites through this mixture.
  6. Spoon into individual bowls and leave to set in the fridge for at least 3 hours.
