Blackberry Cheesecake

Ingredients

75g blackberries
75g raspberries
2 tbsp caster sugar
6 digestive biscuits roughly crushed with 25g of melted butter (to form a crumble consistency)
300g cream cheese
4 tbsp double cream
4tbsp Rachel’s Dairy raspberry yogurt
4 tbsp icing sugar (sieved)
1 lime, zested and juiced

Method

Cook the fruit with the caster sugar for 2-3 minutes.
Mix together the cream cheese, double cream, yogurt, icing sugar and lime juice and zest.
Carefully spoon in a few blackberries until just bursting with colour.
Make alternate layers of crumble biscuits and cream cheese in a glass. Chill for 10 minutes.
Top off with fresh blackberries and spoon over the blackberry and raspberry coulis.
Serve with fresh mint.
